Simple Homemade Salsa

My fiance’s mother makes the most amazing salsa. So, when I attempted to make it for a New Year’s Eve party I knew I had stiff competition.  Although she has never revealed her secret recipe, I had an idea of which ingredients she favored and found a simple recipe that incorporated the basics.

I used the recipe below from The Pioneer Women Cooks and crossed my fingers that my first attempt wouldn’t turn into soup instead of salsa.   

I am pleased to report the end result was a huge hit at the party. 

Restaurant Style Salsa

The Ingredients

■1 can (28 Ounce) Whole Tomatoes With Juice
■2 cans (10 Ounce) Rotel -Diced Tomatoes And Green Chiles (I mixed a can of  hot and original)
■¼ cups Chopped Onion
■1 clove Garlic, Minced
■1 whole Jalapeno, Quartered And Sliced Thin
■¼ teaspoons Sugar
■¼ teaspoons Salt
■¼ teaspoons Ground Cumin
■½ cups Cilantro
■½ whole Lime Juice

The process

Preparation Instructions
Combine whole tomatoes, Rotel, onion, jalapeno, garlic, sugar, salt, cumin, lime juice, and cilantro in a blender or food processor. Pulse until you get the salsa to the consistency you’d like.  Test seasonings with a tortilla chip and adjust as needed.

Refrigerate salsa for at least an hour. 

You can prep and prepare this recipe ahead of time and serve it with your favorite tortilla chips.
